Ingredients :
- 2 zucchini, sliced
- ½ teaspoon of salt
- ¼ teaspoon pepper
- 1 small onion, thinly sliced
- 1 green bell pepper, cut into thin slices
- 2 tomatoes, sliced
- ½ cup condensed tomato soup
- ½ teaspoon dried basil
- ¾ cup grated cheddar cheese
Preparation :
- Put the zucchini, half the salt and pepper in an oiled slow cooker.
- Add the tomatoes, bell pepper and onion.
- In a bowl, whisk together the tomato soup, basil and remaining salt and pepper.
- Pour the mixture over the vegetables. Cover and cook over low heat for 3 hours or until tender.
- Then sprinkle with cheese, cover again and bake for another 30 minutes, until the cheese is melted.

Ingredients :
- 1 eggplant, peeled and cut into 2cm cubes
- 1 teaspoon of salt
- 2 tablespoons olive oil
- 2 medium sized red bell peppers, cut into strips
- 2 small onions chopped
- 3 minced garlic cloves
- ¼ cup tomato puree
- ½ tablespoon Herbes de Provence
- ¼ teaspoon pepper
- 2 cans of diced tomatoes
- 1 cup of water
- 3 medium-sized zucchini, sliced
- 1½ tbsp chopped fresh basil
- 1 tablespoon fresh rosemary
- 1 tablespoon chopped fresh parsley
- 1 baguette, cubed and toasted
Preparation :
- Put the eggplant in a colander over a bowl and add half the salt. Let stand for 20-30 minutes. Then rinse and drain.
- In a Dutch oven, heat the oil over medium heat. Add peppers and onions and sauté until tender.
- Stir in garlic and cook, stirring, for 1 minute.
- Add the tomato purée, herbs de Provence, tomatoes, remaining salt, pepper and water and stir.
- Add the courgettes and aubergines and bring to a boil.
- Then reduce the heat and simmer uncovered for 45 minutes. Stir occasionally.
- Finally, add the fresh herbs and serve with the toasted baguette cubes.
